<p><strong>How to select</strong><br />
Lentils are available in a wide range of colors. Each has its own characteristics so you should carefully choose the one that is appropriate for the dish that you plan to prepare. In general, the color must be uniform. They should also be dry, clean and firm.</p>

Fresh green peas have a very short shelf life and should be refrigerated and consumed within 3 days to ensure freshness. Dried peas last relatively longer but have to be kept in well-ventilated, cool and dry place.</p>

When selecting fresh green peas, always look for bright green coloration, smooth texture and uniform sizes. Dried green peas on the other hand should have very low moisture content with no visible cracks or holes.</p>

<p><strong>How to select</strong><br />
The Cardamom pods have to be bright green in color and seeds are dark brown. The aroma of ripe cardamom pods must be savory and sweet, with a little hint of citrus.</p>

Cardamoms are packed in 40kg master cartons that contain 8 small cartons weighing in at 5kg each.</p>

Almonds have a tendency to go rancid if kept too long. Slice open an almond in half and check if the interior has a solid white texture. If the color is yellowish or appears to have a honeycomb texture, the almond is already old and should be discarded.</p>

We pack our almonds in cartons that weigh 50lbs each.</p>
